Tofu Cubes

This is an all purpose protein dish you can cook in advance and use to top salads, nachos, pasta, soups, sautéed veggies and snack on for quick healthy fuel. Very easy!

Ingredients:
Fresh tofu
Bragg’s Liquid Aminos
Olive oil
Optional lemon or lime juice
Optional fresh ginger root
Optional fresh garlic
 
  • In a sautee or frying pan warm plenty of olive oil on medium heat
  • Add any optional chopped ginger root and/or garlic
  • Remove tofu block from packaging. Discard water.
  • Place tofu block on cutting board
  • Top tofu block with second cutting board
  • Place something on top of cutting board to help press water out of tofu (olive oil bottle or half full water gallon etc.) without crushing it
  • Leave that way for a minute or two
  • Next remove object and top cutting board
  • Using a long knife cut tofu block horizontally into thirds. You will have three layers of tofu from top to bottom
  • Next from top of tofu block cut into grid like formation creating about half inch sized cubes. OR You can cut the tofu into other shapes if you want.
  • Add the tofu to the very warm oil
  • Add a large dash of Liquid Aminos
  • Add any lemon or lime juice (optional)
  • Oil and tofu should be bubbling but not burning. Oil should be liberally covering a portion of tofu from underneath.
  • Cover loosely
  • Check periodically and add more oil if needed. You are almost frying the tofu.
  • After about 7-9 minutes flip tofu pieces over. Cooked side should be lightly browned.
  • Cover and continue to cook checking periodically.
  • After another 5 minutes or so if other side is browned then move tofu around so it flips and other sides of cubes cook randomly. Cubes should be getting slightly smaller.
  • After another minute or so turn off burner and remove to unused burner.
  • Place tofu on plate with paper towel to absorb excess oil
  • Serve warm or cold
  • Simply cover and refrigerate unused portion for another meal!
