Nutty Carob Mousse

Lots of good fats, protein and amino acids! Delicious and nutritious!

Makes 1 serving

Total prep time: 5 minutes (soak almonds overnight before making)
 
½ cup soaked raw almonds
1-2 tablespoons of above almond water – reserve the rest in case you need to add a bit more for the right consistency
2 tablespoons of all natural crunchy peanut butter
¼ cup carob chips
3 tablespoons of honey
 
  • Blend all ingredients except carob chips in food processor or mini-food processor/chopper until smooth. 
  • Then add carob chips and blend to desired consistency leaving some larger carob pieces visible.   Serve in wine glass or decorative dish and top with fresh berries.
